A blend of 45% Chardonnay and 55% Pinot Noir, the 1995 Nicolas-Francois Billecart is a big, full bodied wine of great elegance with refreshingly bright citrus and stone fruits. Perfect with a rich celebratory dinner of roast quail stuffed with wild mushrooms but also a very ageable wine. In fact we would suggest holding it for 5-10 years more in order for it to round out and develop its true potential.

Latour is one of Bordeaux’s most prestigious estates. Their vineyards are advantageously planted high on an undulating, gravelly bank where deep, well-drained soils produce higher-quality fruit and vines are less susceptible to springtime frost damage. This 1995 Latour is an amazingly profound wine that can easily last 50 years or more if properly cellared. Also available in regular bottles for $295.

Without a doubt, one of the superstars in Bordeaux. Officially a second growth in the 1855 classification, Leoville Las Cases has been making wine at first- growth quality levels for a long time. The vineyard is planted to Cabernet Sauvignon (65 percent), Merlot (19 percent), Cabernet Franc (13 percent), and Petit Verdot (3 percent).
