1981 Chateau Petrus Pomerol 1.5 L Bordeaux France
No other wine in Bordeaux captures as much reverence -- or has demand exceeding supply -- as does Chateau Petrus. The secret here is the well-drained clay soil and an almost obsessive attention to detail. Some find it hard to believe a wine made from 95 percent Merlot can last 20 years or more; however, this 1981 Petrus proves it. In fact, another 15 years in the bottle for this magnum is not out of the question.

1982 Bollinger R.D. Champagne France
R.D. stands for “recently disgorged” and refers to the process by which the yeast sediment is removed from a bottle of Champagne. During the time the yeast is in contact with the wine, all sorts of interesting, toasty, yeasty flavors are produced and the wine becomes more complex and creamy on the palate. The longer the wine stays in contact with the yeasts, the finer quality of the wine. Bollinger’s R.D. spends a minimum of eight years on the yeast prior to disgorgement and release to the market.
