R.D. stands for “recently disgorged” and refers to the process by which the yeast sediment is removed from a bottle of Champagne. During the time the yeast is in contact with the wine, all sorts of interesting, toasty, yeasty flavors are produced and the wine becomes more complex and creamy on the palate. The longer the wine stays in contact with the yeasts, the finer quality of the wine. Bollinger’s R.D. spends a minimum of eight years on the yeast prior to disgorgement and release to the market. 1985 Ch. Cos d'Estournel St. Estephe Bordeaux France
By a good measure, the top producer in St. Estephe and one of the 'super seconds' in the Bordeaux firmament. The use of 40 percent Merlot and generous new oak balances the character of Cos d'Estournel's heavier clay soils. The 1985 was an excellent vintage for this chateau.

1985 Chateau de la Guimoniere Coteaux du Layon Loire Valley France
Decadently delicious when young, this multifaceted wine can age gracefully for 50 years or more. As with superlative Sauternes, the noble-rot affected Chenin Blanc grapes are hand-harvested in successive tries, or pickings. Owned by the Doucet family in Anjou's famous Chaume hamlet, the Chateau de la Guimoniere is great as an aperitif or with blue cheese. Off-dry and comparable to the 1986 vintage, the 1985 has now matured and developed a wonderful mineral expression with honey and quince touches. This is a bottle to be decanted.
