Billecart-Salmon is a small, family-owned house known for producing exceptional quality Champagne. Cuvee Nicolas-Francois is their top-of-the-line bubbly made from 45 percent Chardonnay and 55 percent Pinot Noir. 1988 Bollinger Champagne Brut R.D. 1.5 L Champagne France
R.D. stands for "recently disgorged" and refers to the process by which the yeast sediment is removed from a bottle of Champagne. During the time the yeast is in contact with the wine, interesting toasty, yeasty flavors are produced and the wine becomes more complex and creamier on the palate. The longer the wine stays in contact with the yeasts, the finer the quality of the wine. Bollinger’s R.D. spends a minimum of eight years on the yeast prior to disgorgement and release to the market. Bollinger’s 1988 R.D. is a lovely wine -- quite full-bodied, dry, and flavorful with hints of toasted bread, nut, and butter.

1988 Chateau de la Guimoniere Coteaux du Layon Chaume
Owned by the Doucet family in Anjou's famed Rochefort sur Loire village, the Chateau de la Guimoniere is the Coteaux du Layon Chaume appellation's largest producer -- in possibly the greatest sweet white-wine appellation of the Loire Valley. As with superlative Sauternes, the noble-rot affected grapes are hand-harvested in successive tries, or pickings, for this sweet Chenin Blanc. Decadently delicious when young, this multifaceted wine can age gracefully for 50 years or more. Have it the local way as an aperitif, with foie gras, or with chevre or blue cheese. The 1988 vintage needs decanting to divulge its splendid layers of honeyed flavors.

1988 Dom. Romanee-Conti La Tache Grand Cru Burgundy France
La Tache (next to Romanee-Conti, the second-most-famous of all red Burgundy vineyard sites) yielded an exceptional wine in 1988. This is an amazingly long-lived vintage that produced wines with deep, concentrated fruit and rugged tannins. Those tannins are finally beginning to soften in the finest made wines, yet this La Tache should still be held for at least five more years and will it easily hold until 2025.
