1988 Bollinger Champagne Brut R.D. 1.5 L Champagne France
R.D. stands for "recently disgorged" and refers to the process by which the yeast sediment is removed from a bottle of Champagne. During the time the yeast is in contact with the wine, interesting toasty, yeasty flavors are produced and the wine becomes more complex and creamier on the palate. The longer the wine stays in contact with the yeasts, the finer the quality of the wine. Bollinger’s R.D. spends a minimum of eight years on the yeast prior to disgorgement and release to the market. Bollinger’s 1988 R.D. is a lovely wine -- quite full-bodied, dry, and flavorful with hints of toasted bread, nut, and butter.
